Vicki Ruiz (Cruz) Jacobs, 65, of Mandan, ND passed into eternal rest on Monday, July 28th, 2025, at Sanford Medical Center in Bismarck, ND.
Vicki was born November 7, 1959, to Nicholas and Guadelupe (Ruiz) Cruz in Fort Stockton, Texas. She was the youngest of 6 children, with 4 sisters and 1 brother. After her mother passed while Vicki was very young, she and her siblings were raised by their aunt and uncle, Andrea and Alonzo Martinez, of Fort Stockton, Texas.
Vicki became a mother in April of 1982, when she brought her oldest daughter, Lisa, into the world. She was blessed a second time with a daughter, Janet, in February of 1983. Vicki loved being a mom, dedicating much of her time teaching her daughters how to cook and sew, among other things.
Vicki met the love of her life, Shawn Jacobs, while attending a Medical Assistant trade school in Austin, Texas. The two were married in February of 1989, in Mandan, ND. Shawn and Vicki resided in New Salem, ND for the first 7 years of their marriage, where Vicki worked as a Certified Nursing Assistant (CNA) at Elm Crest Manor.
In 1996, the family moved to Bismarck, ND. Vicki’s passion for caregiving brought her to seek employment at St. Vincent’s Care Center and she worked there for the entire 8 years she lived in Bismarck, again working as a CNA.
In 2004, Shawn and Vicki moved to Mandan, ND, where once again she answered the call of caring for others. She was employed at the Mandan Care Center from 2004 until she retired in 2013, due to medical reasons. During her time at Mandan Care Center, Vicki worked as a CNA.
Throughout her life, Vicki enjoyed cooking traditional Mexican dishes and baking sweets of all types. She also had a fondness of sewing. She loved sewing clothing for various dolls but also sewed some outfits for her children and grandchildren. She had a passion for crafts in general and loved trying new things in the crafting world. Another of Vicki’s favorite things to do was spend time with her grandkids. She loved them dearly and did all she could to spend as much time with them as possible, including babysitting when her daughters were working or just needed a moment to breathe.
Vicki attended church at Redeemer Lutheran Church in Mandan, ND. She enjoyed the fellowship of the Redeemer Lutheran community and often brought cookies and other baked goods to church with her on Sundays to share with the congregation.
Vicki was a kind, caring and compassionate woman who loved doing all she could to help others any chance she could. She was loved by all who knew her and spent time with her. Vicki had a passion for life and when put to the challenge of illness, she fought with everything she had.
